How to Make Sattu Stuffing for Litti

STEP 1

Open & Prepare the Ingredients

Take out everything from the pack the Sattu Stuffing Mix (main pouch) .  One oil sachet is for 100 gm with two flavours. If somebody is cooking complete pack of 200gm then use both oil sachet. Empty the sattu mix into a bowl and keep all ingredients ready before you begin.

STEP 2

Add the Oils

First pour in the spice infused mustard oil, then follow it with the raw mustard oil. Each one plays its own role the spice oil brings deep, bold flavour, while the raw mustard oil adds that authentic pungency that makes this stuffing truly traditional.

STEP 3

Add Water The Most Important Step!

Add water little by little while mixing continuously. The target texture is very specific crumbly yet moist, not a dough and not a paste. Be careful not to add too much water, as a pasty stuffing will ruin the litti. Go slow and keep checking as you mix!

STEP 4

Fill & Seal the Dough

Take a medium-sized ball of wheat flour dough and press the centre to create a small cavity. Fill it with 1–2 spoons of the prepared sattu stuffing don't overfill or it may break while cooking. Bring the edges together, seal tightly, and roll it gently back into a smooth ball.

STEP 5

Cook to Perfection

Place the stuffed balls into a preheated pan or mold and apply ghee on top. Cook on medium heat, rotating as needed to ensure even cooking on all sides. Let the heat work slowly patience here gives you the best results!

STEP 6

Check for the Perfect Texture

You'll know it's ready when the outer layer is firm and lightly browned, while the inside holds a dry, crumbly, and beautifully aromatic stuffing. That contrast of textures is the hallmark of a perfectly made litti!

STEP 7

Serve Hot & Enjoy

Serve immediately while piping hot. Pair with dry sabji in chokha style 🥔🍆 and finish with a generous drizzle of ghee 🫙 for that rich, indulgent touch a true Bihari feast, made effortlessly at home!
